Eiker Gårdsysteri and the surrounding area

Eiker Gårdsysteri is a modern farm dairy located in Hokksund, Norway, run by Even Tandberg and Ida Cecilie Søfteland Alvsaker since 2022. It emerged from a co‑op started in 2002 and has its own free‑range barn (about 60–70 cows), on‑site cheese production facility, farm shop, and meeting/event venue. The farm is deeply committed to animal welfare: cows choose when to eat or be milked, enjoy straw pallets, brushes, pasture access, and are equipped with a milking robot. They only use their own high‑quality milk, free of additives and preservatives, ensuring full control from feed to finished cheese.

Beyond its advanced farming practices, Eiker Gårdsysteri embodies a growing movement in Norwegian agriculture that blends traditional craftsmanship with precision farming and technology. The dairy builds on two decades of expertise from the original cooperative, introducing state‑of‑the‑art processing and cold storage systems designed to maintain milk quality and microbial balance from production to packaging. Its closed‑loop system minimizes waste and energy use, while manure is reused as fertilizer, closing the ecological cycle that defines sustainable Nordic farming.

Cheese production at Eiker focuses on small‑batch, hand‑crafted varieties that reflect both Norwegian and European artisanal traditions. Among its specialties are semi‑hard raw‑milk cheeses aged on wooden shelves, creamy farm‑style white cheeses, and seasonally produced varieties influenced by ripening techniques from the Alps and the British Isles. Local microflora from the Hokksund environment give each cheese a unique flavor profile, creating what some Norwegian food critics describe as “terroir‑based dairy identity.”

Eiker Gårdsysteri also functions as a community hub. The renovated barn and event space host farm‑to‑table tastings, educational sessions, and collaborations with local chefs and food researchers. In this way, the dairy operates not only as a business but as a living laboratory for future‑ready food production in Norway. Its combination of ethical animal care, on‑site processing, and direct consumer engagement has made it a model for the country’s new generation of sustainable farms.
